When I cook dishes, I prefer to use salt, soy sauce, ground pepper and vegetable oil, maybe some sugar sometimes. I just add a little vinegar if necessary. Honestly, I don’t like spicy or sour dishes. Thus, I just use a little vinegar and chili.

Except these traditional flavorings, there are some other compound flavorings like 豆瓣酱(broad bean butter) and Nong Tang Bao, which is used when you cook soup.

What flavorings do you usually use?

Depends on the dish, soy sauce, salt and pepper are usual.
vinegar for sour and maybe some chilli paste for heat.

Dave, you can open your own Chinese restaurant in Britain. A great cook as well as a good photographer. Great!

I do like spicy dishes. Sometimes I use dried chili peppers or chili bean sauce. Also, soy sauce, sesame oil, bean sauce, hoisin sauce, rice wine and oyster sauce.

Sounds like you are a great cook too. I admire Dave and you. For myself, I can't cook good dishes except making porridge. My dad told me once that he liked the porridge I made
