| Share a recipe for making moon cakes. Ingredients - 500 g roasted glutinous rice flour - 500 g icing sugar - 200ml vegetable oil - Banana oil - 400ml fresh milk - 10 salted hard-boiled egg yolks - 700g green beans - Corn powder Preparation Use corn flour to dust surfaces, avoids sticky situations when working the dough. Crust: - In a large bowl, beat the sugar, rice flour and vegetable oil with an electric mixer on medium speed, and then add the milk and banana oil. Mix until consistency is doughy. - Roll the rice-dough into a tube shape, and then divide into 10 three-centimetre parts and set aside. Fillings: - Soak green beans in water for 2-3 hours, then steam. - Grind the steamed beans finely. Stir-fry with oil and sugar, then put refrigerate for 1-2 hours until the oil solidifies. - Knead the bean-dough and divide into 10 parts again to make fillings, and put one hard-boiled egg yolk into each serving. - Flatten each rice-dough piece, fill with the bean-dough. Fold the edges of the dough up over the filling and seal to form a ball. - Lightly press the filled ball into a flour-dusted moon cake mould until it takes the shape of the mould. - Remove the cakes from the mould and keep in refrigerator before serving. Moon cakes are best served in fine company, with green tea. |
