Well, firstly you are sincerely welcome to spend your holiday in China. If you are interested in history of China, you may go to visit Beijing, Xi'an, etc. If you are interested in natural scenery, you may go to Tibet, Guilin, etc. If you are inteested in minority chulture, you may go to Yunnan and Guizhou---my hometown. And for kids, you may choose to Hongkong, Shanghai, Shenzhen,etc, as there are many interesting things to do there. Of course, you can combine these above cities.

I suggest Xiamen in Fujian province. One of the cleanest cities in China and lots of beaches. There is an amusement park located on the beach with lots of fun rides. My kid really enjoys playing in the sand and most usually do. I also agree thatYunnan as a great place to visit, Dali, Lijiang Zhongdian.
