Make your Chinese hamburger

Rou Jia Mo, called Chinese Hamburger in English, is a famous snack in Xian. It is just a kind of pancake with minced pork inside. But it is really delicious. I am a local in Xian and love eating it very much. In summer, I just take a bowl of porridge, a Chinese hamburger and a bottle of soda as my supper.

I just found a recipe to cook Chinese Hamburger but didn’t try to make it. You may give it a try if you are interested in it.

Ingredients to make fillings: 1 kilogram marbled pork, 30ml Shaoxin Rice Wine, 6 grams salt, 10 grams rock candy, 20 grams light soy sauce, 15 dark soy sauce, 3 spring onion sections, 3 pieces of ginger, 2 pieces of anise, 1 piece of cinnamon, 1 piece of amomum tsao-ko and clear water.

Step 1 soak pork in water for at least 4 hours and remember to change water.
Step 2 wrap 3 pieces of ginger, 2 pieces of anise, 1 piece of cinnamon, 1 piece of amomum tsao-ko together and tie up the opening.
Step 3 put pork in hot water and get rid off the froth.
Step 4 add rice wine, rock candy, light soy sauce, dark sauce, spring onions, 2 grams salt and wrapped sauce package in the boiler and simmer the pork for 1.5 hours and then add 4 grams salt inside.
Step 5 simmer on gentle heat for at least 2 hours until tender.

Ingredients to make the pancake: 500 grams flour, 7 grams yeast, 5 grams baking soda, 270 grams warm water and 3 grams salt.

Step 1 Mix flour, yeast, baking soda and salt together very well and add warm water in.
Step 2 Knead the dough and cover with plastic film and let it ferment for 1 hour.
Step 3 Separate the dough into small pieces and spread edible oil on the surface.
Step 4 Twist each piece into a thick stick, compress ‘stick’ into a wide shape, double it over, roll it up with a rolling pin and wait for at least 10 minutes. Then roll each up with a rolling pin into round shape.
Step 5 bake them in the pan, turn them over in two minutes to make each side baked.
Step 6 roast pancakes in the oven for 10 minutes.
