At Christmas Eve, my friends and I gathered together to cook some nice dishes for lunch. I learnt some nice recipes from them.

Braised diced beef with white radish and carrot is a kind of soup. It's good to your health. White radish is a treasure. There is a Chinese saying "Eating white radish in winter and ginger in summer keeps the doctor away". See, white radish is very useful.

Ingredients: beef, white radish, carrot, ginger, aniseed, Chinese prickly ash seeds, garlic sprout, spring onion and caraway
Seasoning: salt, cooking wine

1 clean and wash 1 kilogram beef, put it in cool water for an hour to remove blood and then cut into dices (each about 2cm wide).
2 add cold water in the wok, put beef dices in, add 2 tablespoons cooking wine, bring the mixture to the boil and keep boiling for 3-5 minutes. Then remove scum from the water and take beef dices out. If the scum still exists on the beef, clean them with boiling water.

Tip: Do not clean the scum on boiled beef dices with cold water.

3 Add enough water in the wok and bring it to the boil, put boiled beef dices in and then add ginger slices, Chinese prickly ash seeds, 2 aniseeds, a piece of Chinese cinnamon and a fructus amomi tsao-ko into the wok. Bring the mixture into the boil and then simmer them for 1 to 1.5 hours over medium heat.

4 Wash 500 grams white radish and peel its skin, cut it into dices. So does the carrot. Then put them into the wok, add 3-5 sections of spring onion, bring the mixture to the boil and simmer them for 1.5 hours over gentle heat.

5 season with salt half an hour in advance before it’s done.

6 Pour the mixture into the soup late and spread garlic sprout and caraway sections on the surface. It’s done.

Tip:
1 Do not add cold water into the wok when you simmer the mixture. Otherwise, beef dices will contract and can not be cooked well. If you really have to add water, please add boiling water into the wok.
2 Add some hawthorn fruits into the wok if you have. It will make the beef soft and tender.
