What is the best way to tell a restaurant that I cannot eat anything with gluten (wheat, barley, oats, rye)? I have celiac sprue disease, and must eat a special diet. I am going to Chengdu China in about a month.

I guess that is pretty diffcult, as soysauce, the basic spicy of any chinese dish has wheat. So I guess you have to tell them, no soysauce. Secondly, to make the meat tender, we normally marinate the meat with Corn Flower/ fine wheat flow, so no corn flower ( dian fen in Chinese), Other than that, you just need to tell them clearly you can't eat anything with gluten. The problem might be, majority of the chinese do not know this disease, nobody would realize things like soysauce contains wheat.

To write down in one piece of paper in Chinese and then show it before you take orders. And then that is useful!
