Zhengzhou is the city of braised noodles. There are many braised noodles restaurants, such as, He ji, Xiao Ji and Jing Xiang. If you go to Zhengzhou, do taste braised noodles.

Kunshan Ao Zao Noodles

It tastes very well but you don't have to ask how it is made. I am afraid that you won't eat it if you know how they make soup.

Zhenjiang Guo Gai noodles.

Many people have heard about Zhenjiang Vinegar. In fact, Zhenjiang has another local speciality, that is, Guo Gai Mian. Guo Gai means the cover on the pan/boiler. When boiling the noodles, a small cover instead of a big one is used. I don't why the small cover is put into the boiler. But the noodles tastes really nice.

Dan Dan Mian (Sichuan Style noodles)

Chengdu has the most authentic Sichuan style Noodles. If you go there, do not forget to taste Sichuan style noodles.

Yanji Cold Noodles

Beef, egg, pickled cabbage and buckwheat powder are the main ingredients. When it is ready, some fruit slices are added. It looks mouthwatering.

Unfortunately, my favorite Sao Zi Mian (Noodles with diced pork) and You Po Mian (Oil Sprinkled Noodles with chili powder, minced garlic and minced spring onion).
