Dear all,
i spent some days in northern china last year (esp. Qingdao and Beijing) and Iam still searching for some kind oft food i have eaten there. In Beijing you cold buy it on farmers markets and in supermarkets always in the tofu-section. It was long fluffy stripes (grey to brown and maybe deepfried?) in a kind of chili paste or oil - unfortunately i couldnt figure out if its seitan or tofu and also didnt ask the locals, thats why i hope you can help...
thx, karo

I guess it should be dried tofu called 豆腐干 in Chinese.

No.1 is dried tofu.
No.2 and No.3 are cold dried tofu with chili oil.
