I currently have a 1 month Z visa that I need to change to a work permit once I get to China. However, before going to China I have another trip planned in Asia. My question is whether it is possible to fly to Beijing or Shanghai, use the 72 hour transit visa, drop off my luggage, continue on my other trip, and then enter China on my 1 month Z visa? Or will they stamp my 1 month visa immediately?

It's possible that they will stamp on yoru Z type. Z type is valid for three months and you are required to change it into a resident permit within 30 days after you arrive. To play it safe, you can start your trip to other Asian countries. Then you enter before your Z expires.
