I tried to find answers in other threads but was unable to get a clear understanding of what I will need to do when transferring flights. Arriving in Beijing on Air Canada from Toronto at 16:05, then transferring to Korean Air to Busan, Korea at 18:35. Are these airlines in the same terminal? Do I just proceed to my connecting flight or are there more steps involved?

Air Canada is in T3 while Korean Air is in T2, so you need to change terminals.
The international to international transfer procedure is :
Arrival → transfer procedures → Transit Inspection → Security Inspection → go through the customs sample check of hand baggage if necessary → Waiting & Boarding
BTW, you should hurry up to avoid missing next flight.

Is it an easy process? Just trying to figure out exactly what to expect. Are there any forms to fill out? If I have a checked bag do I have to retrieve it and recheck it? How do I get to the other terminal while in international transit?
