Tea Discrimination
1. The New Tea and the Old One:
The tea leaves picked in Spring are bitter, the ones in Summer are puckery, the ones in Autumn are fragrant, for the climate is suited and the rain is enough and the ones in Winter are weak, for it is cold.
(1) The green tea picked in Spring is the best. The Spring tea means that picked before May.
(2) The Summer tea referres to that picked from June to the beginning of July.
(3) The Autumn tea means that picked from August to September.
(4) The Winter tea referres to that picked from October to November.
Of Oolong tea, the Tieguanyin Tea is the Winter one. The Oolong tea picked in Sring is the best. There is the Osmanthus Oolong Tea only in Spring.
2. The Differences Between the New Tea and the Old One: Colour, Flavour and Fragrance.
The flavour of the new one is pure and rich, while that of the old one is not pure. The fragrance of the new one is fresh and strong, while that of the old one is not strong.
Origin of Tea
The tea originated in China. There is the longest history of China in the world, so the Chinese are interested in it. In Chinese history, the rich were living the life of " tea handed by servants and meal cooked by cooks " and the poor the life of " plain tea and simple food ", but these two different lives are also link to tea. In the whole, where there is a cup of tea, there can live happily. The Chinese are accustomed to the life of " three meals with tea every day ". There are various tea habits because of differences of history, locations and nationalities.
