Hi JAYE,
I suggest you go to southern of China. THe northern of CHina including Beijing will be cold in January. So traveling in Shanghai, Fujian, Hainan would be better and your 2 or 3 weeks time will be OK for your trip.

New Year countdown? You should check that out in advance..... where I was last year in an expat bar it was very quiet. Any comments from the big city people on this?

If you are a real traveler rather than a tourist (as you said you "prefer to travel on our own"), go to China's west: Xi'an, Lhasa, Dunhuang, and travel the ancient silk road.
