You can get your China visa OK in the States, presumably a 3 month one, but maybe you should pay the extra fee and get a double or multiple entry, and yes Jabaroo was right, there is a higher fee for honourable American visitors!

I wouldn't get train or bus tickets in advance - for an unhurried trip like I think you are planning. Retain flexibility at the expense of not always being able to go when you want to.

I'm not sure if this is still current, but it may be worth a shot: The Hong Kong visa office (for mainland visas, that is) can be contacted at:
prerecorded phone: (+852) 3413 2300 (2 hr service)
real person answering the phone: (+852) 3413 2424 (Mon-Fri office hours (HK time, naturally)
fax: (+852) 3413 2312
email: mail.fmcoprc.gov.hk|visa

Remember, visa fees depend on your nationality. Americans pay more than most because the US charges Chinese citizens more than most other countries to get a US visa. Having said that, even for an American, the most expensive same-day service, a visa for the mainland shouldn't cost much more than HK$600.

Thank you for all of the information. Because of what I have read, perhaps I am confused about getting a visa into the mainland. ....and I apologize in advance if this is a foolish question:

If I get a visa to China within the US before I leave, will it be valid for entry from Hong Kong to the mainland? Or is a special entry visa required?

"will it be valid for entry from Hong Kong to the mainland?"

Absolutely. A visa for the mainland is a visa for the mainland. Don't worry about it.
