It is called 油碟 in Chinese. Put your mutton, vegetables, etc. into it after boiling them.

I really don't know what all the fuss is about. It's just and offal stew. Excuse my pun, it was intended. Research it's history and you will find that it was a cheap dockside meal to feed hungry waterside workers but today it is the cities 'Signature' dish which is fair enough. I've had a few and I can still pass it up pretty easily. I've had a few very nice ones but they are few and far between and by far the worst has to be the FishHead Hotpot which is usually preceded by the question 'Do you like fish?".. For someone who loves fish this is a forlorn dish. Shark bait where I came from.

It looks so hot, with all those chillies in there it would be way too much for me.

It is too hot. I am afraid of the hotpot because I do not like spicy food. Everytime my friends and I go to have hotpot, we usually choose the 'mandarin duck' pot. The flavor is quite good.
