Both of these words 老婆 and 妻子 describe a man's wife, correct? So what is the difference in meaning? Why would you choose one word over the other?

Griz, it has no difference between 老婆 and 妻子 in meaning. 妻子 is more formal than 老婆. For example, if you want to introduce your wife to a guest. 妻子 is better than 老婆.Actually, there are many ways to call your wife. In ancient times, you can call your wife 夫人,娘子.内人and 拙荆 also mean the same thing. But they are more formal.

Thank you BBQQ

None of those are derogatory references to a wife. Correct?

Yes, Griz. They do not have any derogatory meanings.
