Red date and longan drink

I have posted two important ingredients, namely dried longan and red date, where both are part of the main ingredients in Chinese longan drink (in Malaysia particularly). Sometimes white fungus or also known as snow fungus is added. To sweeten, rock sugar is added.

White fungus or snow fungus contains iron, Vitamin C, calcium and phosphorus. White fungus when stewed with rock sugar lubricates the colon and stimulates peristalsis. Thus it is mild laxative for constipation patients. White fungus is also said to be effective in nourishing the lungs, healing dry coughs and clearing heat in the lungs.

Wash the white fungus in warm water, drain and place in a bowl with 2 cups (500 ml) of boiling water. Cover the bowl and let the white fungus soak for 15 minutes, or until soft. Drain and remove the stems and any hard or discolored parts. Wash in warm water three times, then soak again in boiling water for 3 minutes

Rock sugar (or use crystal sugar for substitute)
Rock Sugar has its origins in India and Persia in the first half of the 9th century described the production of candy sugar. Crystals were grown as a result of cooling supersaturated sugar solutions. In order to accelerate crystallization, confectioners later learnt to immerse small twigs in the solution for the crystals to grow on. Rock Sugar is known for centuries for its therapeutic benefits in Ayurveda (Science of life). Rock Sugar is used in Ayurveda in many herbal for mulations like syrups, due to its unique herbal properties. It is also used as a substitute for refined sugar, and can be used in small amounts as a desert or added to other deserts.

These traditional Chinese recipes are popular as they are believed to help nursing mothers improve their milk flow as well as volume, strengthen the respiratory system thus, helps to prevent cold.
Ingredients (serves 4):
1 litre or 8 cups of plain water
50g seeded red dates, soak in water for 10 minutes
75g dried longan, rinse before use
50g snow fungus
30g fresh ginger, crushed
80g rock sugar or more to taste
3 pandan leaves, knotted

Method:
1. Bring 8 cups water to a rolling boil.
2. Add knotted pandan leaves, softened red dates, rinsed dried longan, crushed fresh ginger and rock sugar. Simmer for 15-20 minutes on moderate heat. Then add snow fungus.
3. Adjust sweetness according to taste. Can be served hot, at room temperature, or chilled.
