We probably all like Chinese food as it is one of the best in the world, if not the best.
I cook whenever I can and get ideas from tv, Chinese friends and from chefs when I am in the country.

I would like to learn more, can anyone tell me their favourite dish and how they cook it. Photos would be great or just type away and when I have cooked it I can tell you all about it.

My favorite dish is Kung Pao Chicken
Here is the standard recipe:
Ingredients:
2 boneless, skinless chicken breasts, 7 to 8 ounces each,
8 small dried red chili peppers
2 cloves garlic
2 green onions (spring onions, scallions)
4 tablespoons oil for stir-frying, or as needed
1 teaspoon Szechuan peppercorn, optional
1/2 cup peanuts or cashews
a few drops sesame oil, optional
2 tablespoons dark soy sauce
1 tablespoon Chinese rice wine or dry sherry
1 teaspoon suga

West Lake Fish in Sweet and Sour Sauce

It is prepared with a West Lake grass carp, weighing about 0.5kg and starved for two days, as its main ingredient. Boiled for three minutes and then sugar and vinegar sauce is poured over it.The fish tastes delicious with a taste similar to crab.

Kung pao is a nice dish, popular here in the west but not tasting like it does in China

The west lake fish sounds nice, does it have to be starved? cant it die with a full stomach

I am with Marrie. I prefer Zhe Jiang Cuisine.

Shrimp with Green Tea Leaves

Here is another Zhe Jiang Cuisine.

Bean Curd Soup with Clam
The bean curd soup with clams is very famous and as"top freshness of the world".

1. prepares data:
Advocate makings: Bolus of crab flavour stay of proceedings, fish, clam, kelp, bean curd, sweet green is right amount
Complementary makings: Salt is right amount, candy is right amount (need not put)
2. fish bolus is thoroughlied cook
3. cuts bean curd, the piscine bolus section that thoroughly cook
The boiler below
4. clam is copied (can better go sand)
5. does boiled water, put all stuff that divide bean curd
10 minutes are boiled after
6. water leaves, 10 minutes are being boiled into bean curd below
7. joins right amount salt, candy (can carry delicacy) , of course candy need not be put, should be already very bright
After
8. gives boiler, add right amount sweet onion powder

Each Shanghai person is a picky on food., which may account for the popularity of Hangzhou dishes. The charm of the ancient cuisine has been recognized since the Han Dynasty (206 BC-AD 220).

Hangzhou food is representative of the southern style.
Reminiscent of the romantic scenery around Hangzhou, these dishes are delicate, tender, refreshing and crisp. All ingredients used in the cooking come from the fertile land around the city, known as a land of plenty.
The strict cooking and its exquisite style more than satisfy Shanghai people's demands.

Cong Bao Hui (Fried scallion pancake), Hangzhou
Main ingredients:Pancake.It is golden in color. Taken with spicy or sweet sauce, it tastes fresh, fragrant and refreshing.

Chestnut Porridge with Sweet Scented Osmanthus, Hangzhou

Main ingredients:Chestnut porridge

Features:The porridge has varied and distinct colors and is filled with crisp chestnuts. The soup is thick and the sweet-scented osmanthus has a pleasant smell. It should not be served too sweet.

Dongpo's pork is a famous Hangzhou dish which is made by pan-frying and then red cooking pork belly. The pork is cut to around 2 inches square in dimensions, consisting of half fat and half lean meat. The mouth feel is oily but not greasy, with the fragrance of wine.

Mouthwatering Cat's Ear is a must-eat when visiting Hangzhou. Dough that is shaped like a cat's ear is mixed with chicken shreds, diced ham, dried scallops, mushrooms and sliced bamboo shoots and served in soup stock that has been simmered for many hours on the stove. It is one of the symbolic dim sum of the city.

Shanghai cuisine - Hairy Crab, my favorit of the favorites-It's lux. food.


[Generally speaking, the hairy crab refers specifically to Eriocheir sinensis from the Yangtze River water system, among which, that from the Yangcheng Lake enjoys the best reputation.
