I am thinking about doing the 12 day travel and someone in my party is picky with food. If that person does not eat fish, would they be ok at all the meals?

If they are picky with their food that is not your problem, eat what you like and if they choose not to then that is their hard luck.

China has amazing food, anyone not willing to try it is a fool.

OP,

Chinese food has more kinds and varieties than any other nationaliy's food in the world, and they share their food every meal. So not to worry, without fish, there vare enough of other food.
Since yiou travel in a group and refer to Chinese food, you are sure to order at least 2 meat and 2 vege dishes, or even more if your group is big. So if that "picky" person don't eat fish, the others can still eat fish, only the picky one share 1 dish less.

I have been to southern province of Thailand, for breakfast alone one food stall provided 25 types of food
