Erm, obviously because it's China?! It's only reasonable that Chinese in China speak in Chinese, be in Mandarin, Cantonese or whatever other dialect.

you should find an interpreter or guide. There are many good guides even in TCG people always there to assist. In GZ you have our constant contributor such as Shirley or Leilalove. Well everything is not free, a guide appointed needs to be compensated.

Have you perhaps considered that the vast majority of people visiting Guangzhou are still the local Chinese?
There're people who do speak English, but they won't be speaking it to one another on the street (why should they?) so you won't necessarily be hearing it around you. If you look for interpreters/guides you'll be able to find English-speaking ones without that much problem.

a lot of tourists around me having the same trouble in languages

its okay for me an it doesn't bother me and am not accusing anyone am just giving an advice :D

am not gona buy anything else then some things for me an yah thats my main point of this tour
but first i love to explore then i can get a professional translator and guide so i can do that

Except for the big dinner in the eve of CNY, the first three or four days of CNY shops in Shangxiajiu will be opened as usual.
