You should be more specific in your question. There are at least 8 different cuisines in China - each with its special flavor .
But if you happen to be in Chongqing - you have to try hot pot and spicy chicken!!!

There is one Muslim restaurant around Chunfeng Road in Shenzhen that provides hot pot.
