On my last trip to China I had luobo and I think it classes as pickled, it was the skin and possibly in vinegar and soy sauce but not sure.

Can anyone suggest how to do it or do you know any recipes other than the radish cake or stir fry that I usually use it for?

Yes, it is Chinese pickle radish, I like it very much. My mom's special dishes. I know that the fresh radish needs to be soaked in a crock, and it is ok to be cut into strips or not. But it may quiker if cut into strips. Most important is you need special-made pickles, sour but not made of vinegar I think, by fermentation. My mom often get it from others, then, others ask my mom for it as sharing resources. . It is crisp, right?

The crock my mom uses for pickles. Except for radish, cabbages, brocoli, cucumbers, chilli and slender cowpea are also can be done in this way.

The radish was crispy and a little bitter, nice pickle taste.

I can buy the radish here in the UK but would like to know recipes for it.

Davec, the recipe is not complicated. But it is a bit hard to make it successfully. Here is a quick way to make pickled radish. You may give it a try.

Ingredients: 700 grams summer radish (I am not sure if I translated this correctly), 3 grams salt, 10 grams sugar, 25 grams vinegar, 10 grams dried chili and some sesame oil.

1.wash and peel summer radish and cut it into small dices.
2.put summer radish slices in a big bowl and then mix them with salt and wait for more than 1 hour.
3.Cut dried chili into sections (1 cm each).
4.take radish dices out and squeeze to get rid of the water.
5.Mix radish dices with sugar and vinegar.
6.fry chili sections in hot vegetable oil for a second.
7.pour chili oil on the radish dices.
8.Add sesame oil in and mix radish dices very well.
