| Almost 70% of Shanghainese came from norther east of Zhe Jiang Province. Therefore, their eating habits are quite similar. Ningbo cuisine belongs to Zhe cuisine and is noted for seafood retaining the origninal freshness, tenderness and softness. Yellow Croaker Wrapped in Dried Bean Curd Sheet (腐皮包黄鱼) (Yellow Croaker is very precious fish only available in East China Sea. It tastes very outstanding delicious. A unique Ningbo dish that should be prepared with a very skillful cook: wrap croakers with bean curd sheets, cut it into blocks and fry them until they turn golden. This dish is best enjoyed with vinegar. |

| Here is another Ningbo cuisine-Steamed Turtle in Crystal Sugar Soup that is listed in the first place. It tastes sweetie and salty with very strong fragrance, rich protein and Vitamin B. |

| Ma Lan Tou-It's an ordinary dish found in Shanghainese dinner table in summer. It contains finely diced dried tofu and a chopped green herb. The aroma of the green herb with taste of aromatic sesame oil is extremely pleasing. |

| It's time now for Shanghainese enjoy Yan Du Xian-腌篤鮮 Yan Du Xian” (腌篤鮮), a simple, hearty, quintessentially Shanghainese soup made from a duo of cured pork and fresh pork plus fresh winter bamboo shoots (冬筍) or spring bamboo shoots. Yan (腌) means “cured” referring to salted pork or smoked ham, and Xian (鮮) means “fresh” indicating fresh pork. Du (篤) in Shanghainese dialect stands for “stewing” or “boiling.” The best container for stweing this soup is Chinese clay pot. |
