Salted Black Beans/Fermented Black Beans

Greetings all!

My question is. Is there a difference between salted black beans and fermented black beans or are they the same product?

I am almost certain that those are terms used to describe the same product: dòuchǐ, one of my new favorite ingredients.

PEGASUS is right. I guess it should be 豆豉. By the way, have you heard of 豆瓣酱 (thick broad bean sauce)? Once I thought they were the same thing but I was wrong. They are different things.

豆豉 is made of soy bean, which is used to make soy sauce. It looks black.

豆瓣酱 is made of broad bean. To make 豆瓣酱, you need to fully boil broad beans first. Then mix boiled broad beans with flour, ferment the mixture in fermentation chamber for 6-7 days until moulds appear. Then put them in an earth ware, add salt and water and ferment for 40-50 days until the broad beans turn brown. Then put red chili and salt in and ferment for 3-5 months. Finally, you make 豆瓣酱 successfully.

Ohhh, yes, dòu​bàn​jiàng is amazing. (Haha, I can pronounce the true names, but I cannot spell them. ) I think the best comes from Pí​xiàn (since the people living in the area first developed it). It is one of the essential ingredients in Sichuan cooking, I believe, and very difficult to find in the states outside of the Chinatown areas.

I usually use 豆瓣酱 to cook Twice-Cooked Pork Slices (回锅肉). Do you use 豆瓣酱 to make dishes?

Thank you for the replies. I bought the black beans sealed in the plastic bag at an Asian store here.

I've seen broad bean sauce in jars there also.

Haha, did buy some broad bean sauce? It makes the dishes delicious.
