Take a train from Zhangjiajie to Guangzhou, and then change the train from Guangzhou to Hong Kong;
Take the train from Zhangjiajie to Shenzhen, then head for Luohu border, pass the border and you will be in Hong Kong. THe Hong Kong MTR is available at the Luohu border of Hong Kong side.

I will have you know that it is not only possible but I have done the round trip of Shenzhen-Xiamen-Shenzhen in night sleeper bus a year before your post; in slightly under 9 hours on both legs.

Armchair traveller only think so, real traveller who made the journey knows for sure.

There are not direct trains from Shenzhen to Xiamen while the train from Guangzhou to xiamen tales about 13 hours.
The distance from Guangzhou and shenzhen to xiamen are almost the same. If you travel by bus, i think there is no much difference. If you travel by air, you can chhose by comparing the air ticket.

I want to take an evening bus from Xiamen to Luohu, walk across border and go to Kowloon. The return I would also prefer an evening bus from Luohu.

Where do I get a bus in Xiamen for Luohu and what time does it depart?
After crossing the border back to Shenzhen can I walk to bus station and what time does the bus leave Luohu to go to Xiamen?

Can you give an approximate cost and how long the bus takes? Because i don't speak Chinese, I would rather not take a taxi if possible. How far from Luohu station to border crossing?

Luohu Bus Station is very close to the border crossing. When you arrive at Luohu Bus Station, go to the second floor and then you arrive at the border crossing.

I am not sure how long it takes from Xiamen to Shenzhen by bus. Someone said ‘around 8 hours’.

Luohu Bus Station is located at the first and second floor of Luohu Commercial City, which is very close to the Luohu Port. You can easily walk to the Luohu Bus Station from the Luohu Border.
