While there is so much fantastic Chinese food to sample there are a few things to keep in mind.

For

In Sichuan and Chongqing 'Fish Head Hot Pot' is quite popular. MAY001 'S COMMENT "never a fish in the dish gazing at you!" IS IN FACT NOT QUITE CORRECT. you will almost always be served the whole fish, not that there is anything wrong with that and fish head hot pot is exactly what is says it is just heads and lots of them floating around.

The majority of meat dishes are full of bones, chopped roughly with the meat clever and one needs to be careful not to do any damage on the teeth.

Yes, JABAROOTOO, u are right. I forgot Fish Head Hot Pot since I don't like it at all. I'm really afraid of those dishes with fish/langouste/roster/etc. heads.
I like greengrocery, bean curd, beef, pork, chicken and mutton. Fish head? No way!
