"Liao Cai---Liao Ning; Ji Cai---Ji Lian; Qin Cai---Shaan Xi,Xi'an; Ning Bo Cai---Zhe Jiang,Ning Bo; Dun Huang Cai---Gan Su,Dun Huang; Hu Cai---Shang Hai; Jin Cai---Shan Xi; Hang Cai---Hang Zhou,Zhe jiang......" QUOTE Liao Cai must be kind of Dongbeicai, and actually, there are a lot similar between Dongbeicai and Lucai; So, Liaocai can hardly represent a new type of cuisine; (so as the rest I want to say) Ji Cai---Ji Lian - Did you mean "Jilin", if so, I want to say the same thing as I said about "Liaocai"; Qin Cai---Shaan Xi,Xi'an; Well, Shaanxi people love hot food not less than Sichuan people, so Shaanxi food borrowed a lot from Suchuan food, and there are so many Henan people moved to Shaanxi over many years, you can see labels of Henan food in Shaanxi food, of course muslim contributes some to Shaanxi food. I say "shaanxi Food" instead of "Shaanxi cuisine" because I don't really think it makes a new type of 'cuisine' as Sichuan and Hunan cuisines did so excellent; Ning Bo Cai---Zhe Jiang,Ning Bo; I haven't tried that yet, nothing to talk about:-) Dun Huang Cai---Gan Su,Dun Huang; I ate in Dunhuang, and until today I didn't know there is such a phrase called "Dunhuangcai", hehe~ Hu Cai---Shang Hai; I agree with this one, I am not sure why Hucai was not listed as the "old eight" list, Hucai is good and has its own characteristics; Jin Cai---Shan Xi; The noodles and vinegar they make are pretty tasty, do they cook dishes too??? :-) Hang Cai---Hang Zhou,Zhe jiang......" I have no idea, isn't that another saying of "Zhecai"?? |

![]() | Hi,Rita, I think Liao Cai and Ji Cai are both Dong Bei Cai,but it is a little different!Ji Cai has some ways of Korean.And I don't think Dongbei Cai is similar to Lu Cai. And Hangzhou Cai and Ningbo Cai are so different,even Shaoxing Cai,I don't know why!They are in the same zone. I have no idea of Qin Cai,so strange! And I agree with Jin Cai,Shan Xi. |

![]() | When I ate in Wuzhen, the only dish impressed me deeply was Choudoufu! There must be same thing about Zhecai in Wuzhen, it seemed nothing special. I don't know. |

I found the same thing on a western on-line culinary site, awhile back: Eight Schools Of Chinese Cuisine China covers a large territory and has many nationalities, hence a variety of Chinese food with different but fantastic and mouth watering flavor. Since China's local dishes have their own typical characteristics, generally, Chinese food can be roughly divided into eight regional cuisines, which has been widely accepted around: Shandong - Sichuan - Guangdong (Cantonese) - Fujian - Jiangsu - Zhejiang - Hunan - Anhui - Certainly, in addition, there are many other local cuisines that are famous, such as Beijing Cuisine and Shanghai Cuisine. |
