Quickest? Probably if you could hire a vehicle and driver, especially if you have a lot of luggage.
There aren't a lot of trains for Ningbo -- Shanghai, and the fastest takes around 3h40min, which may or may not be suitable for your depature timing. Besides, the train stations in Shanghai are still about 1-1.5 hours drive to Pudong airport.
What time is her flight departing from Shanghai Pudong airport?
