Rice Noodle Roll from Canton

Have you try this before? I am a Chinese from North China. I seldom see this rice noodle roll in my city. Yesterday, I got a change to eat it in a restaurant, which the owner is a Cantonese. I am not sure if this “appearance” is classical, but it tastes really good. I am wondering how to cook this by myself. Does anybody know?

It is called changfen. The rice flour is mixed with water and steamed.

Why is it called Chang Fen? It has nothing to do with pig's intestines.

The roll likes pig's intestine, but the real pig's intestine is called 葫芦头. What a misleading!

I tried to make rice noodle roll last weekend, but it turned out to be 米皮.

Formerly I am told, they put pig intestine in the roll, but later they also have vegetable, egg, etc. In many noodle restaurants in Guangdong you can find changfen available, including vegetable and egg changfen only. (Google translate pig intestine as 猪大肠).

Dear Gloomy, if you want to make your own changfen, you can use the flat lid of pot, wipe the lid with cooking oil. The rice flour is mixed with water thoroughly and put the mixture on the lid or any suitable plate evenly and thinly. Steam the mixture for 10 minutes. If you want to put the egg, take out the steamed rice flour and add egg, and steam it back for 5 minutes. Take it out while hot, roll it according to your liking. You can eat it with light soy sauce.

It's very complicated to make Changfen, I think. Thus, I may taste it in a restaurant instead of making it on my own.

Cherry, not very complicated. I have done it before. Of course buying from restaurant is easy, but making on our own, you'll feel happier.
