Wan,

You really have a healthy life. The seasonings you use seem all natural. The chili you mentioned must be very hot. You know what? I usually eat ginger slices when I eat hot pot together with my friends. I do not know why. I am always the person who is so lucky to pick up ginger slices.

Ginger is good for your body. Sometimes I drink hot milk tea with ginger. Traditionally we believe ginger will take excessive wind from our body.

Yes, there is an old saying"冬吃萝卜夏吃姜,不用医生开药方(Eating radish in winter and ginger in sumer keeps the doctor away)."

The best time to eat ginger is morning. It is good for your stomach. But do not eat ginger after lunch and at dinner. It is bad for your lung and heart.

Sorry, I know very little about ginger. I just tasted two kinds of ginger. The first kind can be eaten raw or pickled. I doesn't taste bitter or spicy. The second is the usual ones we add when we cook dishes.

How about wild ginger? Some people include galangal as ginger which to me is not correct.

The wild ginger is a kind of traditional Chinese medicine. It is also called "Huang Jing" in Chinese.

Just like lemon grass too, it has two types, one for cooking and the other one for its aromatherapy.

I just drink lemon juice. Seriously, I didn't use lemon grass when cooking.

I expect so, because the Chinese seldom use lemon grass unless they cook Thai dishes.
